How to make delicious squash caviar

We start thinking about how to make autumn squash caviar in the summer. Ingredients for a 1.5 liter saucepan:

  • Medium-sized zucchini - 4 pcs. (approximately 1 kg)
  • Medium size tomato - 2 pcs. (approximately 150 gr.);
  • Tomato paste - 2 tbsp. l.;
  • Pepper mixture - 1/2 tsp;
  • Vegetable oil - 50 gr.;
  • Onion - 2 pcs. (approximately 200 gr.);
  • Large carrots - 1 pc.;
  • Salt - 1/2 tbsp. l.

Recipe for making squash caviar like in the store:


1. If you think that this recipe requires special skills, then you are mistaken! Everything is quite simple to prepare. We clean vegetables from skins and husks. We rinse them so that nothing unnecessary gets into the dish. We cut onions, zucchini and carrots according to the old habit - into cubes. By the way, to prepare caviar it is not necessary to peel the skin of the zucchini. The only exception is if the skin is damaged.

2. For cooking, it is best to choose a saucepan or deep frying pan. A cauldron is ideal. Pour oil into a heated pan and add onions and carrots.

3. We will add chopped zucchini to the pan only when the onions and carrots become soft. Then you need to cover the pan with a lid.

4. You need to simmer the vegetables for about 15 minutes, then add salt. Further, the cooking time for caviar depends on the dishes you choose. Everything cooks very quickly in a saucepan and within 30 minutes the vegetables will be completely ready. Remove the pan from the heat and puree the vegetables using an immersion blender.
Advice: if you want the squash caviar to be thick, then you should use a tablespoon to take out a little liquid before chopping.

5. In order for the zucchini caviar to turn out like in the store, you need to add tomato, garlic and tomatoes. We will make a separate refueling.

6. Place the ingredients in a deep container and grind with an immersion blender.
